Macaroni and Cheese Meat Loaf
Cooked Macaroni
1 Pound Hamburger
1/2 Cup Soft Bread Crumbs
1/2 Cup Milk
2 Eggs, Slightly Beaten
1/2 Cup Chopped Onion
2 Tablespoons Chopped Bell Pepper
1/3 Cup Grated Cheddar Cheese
1 Teaspoon Salt
1/4 Teaspoon Pepper
Combine all ingredients and mix well. Form into a loaf. Bake in a 350 degree oven for 1 hour.
Macaroni Loaf With Meat Sauce
8 Ounces Elbow Macaroni
13 Ounce Can Evaporated Milk
1/2 Pound Grated Cheddar Cheese
4 Eggs, Beaten
1/2 Cup Chopped Pimiento
1/4 Cup Chopped Green Pepper
Salt
1/8 Teaspoon Paprika
Dash Cayenne
1 Cup Fresh Bread Crumbs
1/4 Cup Melted Butter
10 1/2 Can Condensed Cream of Chicken Soup
1 Cup Milk
2 Tablespoons Instant Minced Onion
12 Ounce Can Luncheon Meat, Chopped
Heat oven to 350 degrees. Cook macaroni as package directs. Heat evaporated milk in a sauce pan for 2 minutes. Stir in cheese and cook over low heat, stirring, until melted. Combine macaroni, cheese sauce, eggs, pimiento, green pepper, 1/4 teaspoon salt, paprika, cayenne, bread crumbs and melted butter. Grease a loaf pan. Turn mixture into pan. Bake 50 minutes. Combine soup with milk. Add onion and chopped luncheon meat. Stir constantly over low heat for 10 minutes. Remove loaf from oven and let stand 10 minutes. Invert onto a heated platter. Slice and top each serving with meat sauce.
Martha's Company Casserole
8 Ounces Noodles
1 Tablespoon Butter
1 Pound Ground Chuck
16 Ounces Tomato Sauce
1/2 Pound Cottage Cheese
8 Ounces Cream Cheese
1/4 Cup Sour Cream
1/3 Cup Snipped Scallions
1 Tablespoon Minced Green Pepper
2 Tablespoons Melted Butter
Heat oven to 375 degrees. Cook noodles al dente, drain. In 1 tablespoon butter, sauté chuck until browned. Stir in tomato sauce. Remove from heat. Combine cottage cheese, cream cheese, sour cream, scallions and green pepper. In a 2 quart casserole, spread half the noodles. Cover with cheese mixture then with remaining noodles. Pour melted butter over noodles. Spread meat mixture over top. Bake for 30 minutes.
Meat Ball Pancakes
3 Egg Yolks, Lightly Beaten
1/2 Pound Ground Beef
1/4 Teaspoon Baking Powder
1/2 Teaspoon Salt
Dash Pepper
1 Teaspoon Lemon Juice
1 Tablespoon Minced Parsley
1 Tablespoon Grated Onion
3 Egg Whites, Stiffly Beaten
Blend together yolks, ground beef, baking powder, salt, pepper, lemon juice, parsley and onion. Fold in egg whites carefully. Drop by spoonfuls onto a greased hot griddle. When puffed and brown, turn and brown the other side. Serve at once.
Meat Balls and Potatoes In Curry
1 1/2 Pounds Hamburger
1/2 Cup Minced Onion
1 Cup Bread Crumbs
1/3 Cup Sour Cream
2 Tablespoons Chopped Parsley
1 1/2 Teaspoons Salt
1/4 Teaspoon Pepper
3 Tablespoons Fat
20 Bite Size Potatoes
1 Can Cream Of Celery Soup
1 Cup Sour Cream
1/2 Teaspoon Curry Powder
Combine bread with 1/3 cup sour cream, then add hamburger, onion, parsley, salt and pepper. Form into 1 inch balls and brown on all sides in fat. Remove to a casserole. Brown potatoes in the same skillet and place them over the meatballs. Combine soup, sour cream and curry powder. Mix thoroughly and pour over casserole. Cover and bake in a 350 degree oven for 25 minutes. Uncover and bake 12 minutes longer.
Meat Balls In Pineapple Sauce
2 Pounds Hamburger
1 Sliced Bread, Crumbled
1/2 Cup Milk
1 Egg, Beaten
2 Teaspoons Salt
1/2 Teaspoon Garlic Salt
1/2 Teaspoon Pepper
2 Tablespoons Oil
1 Can Beef Bouillon
1 Can Pineapple Chunks In Syrup
1/2 Cup Chopped Bell Pepper
1/4 Cup Wine Vinegar
1/2 Cup Sugar
2 Tablespoons Soy Sauce
1/2 Teaspoon Salt
1 Teaspoon Monosodium Glutamate
2 Tablespoons Cornstarch
Soak bread in milk. Add to hamburger, egg, 2 teaspoons salt, garlic salt and pepper then form into small balls. Brown in cooking oil. Remove and set aside. Combine beef bouillon, pineapple with syrup, bell pepper, vinegar, sugar, soy sauce, 1/2 teaspoon salt, and monosodium glutamate in a saucepan and bring to a boil. Thin cornstarch in water and stir into sauce. Simmer for 15 minutes until sauce is clean and thick. Add meatballs and simmer for 15 minutes.
Meat Crust Pie
1 Pound Ground Beef
1 Cup Soft Bread Crumbs
1/2 Cup Milk
1 Tablespoon Chopped Onion
1 Teaspoon Worcestershire Sauce
3/4 Teaspoon Salt
1/8 Teaspoon Pepper
2 Cups Seasoned Mixed Vegetables
1 Cup Diced Tomatoes
1 Bell Pepper, Cut Into Rings
Combine ground beef, bread crumbs, milk, onion, Worcestershire sauce, salt and pepper. Pack into a 9 inch pie plate, covering the bottom and sides. Press another pie plate on the top. Bake in a 350 degree oven for 7 minutes. Remove upper plate. Bake 3 minutes. Heat vegetables and tomatoes. Spoon into the meat crust. Garnish with pepper rings. Return to oven for 20 minutes.
Meat Curry
4 Cups Boiling Water
2 Teaspoons Salt
1/4 Teaspoon Pepper
3 Cups Diced Celery
4 Tablespoons Flour
1 Teaspoon Curry Powder
1/4 Cup Water
1 Pound Lamb, Veal or Beef Shoulder, Cubed
Seasoned Flour
Roll meat cubes in seasoned flour. Brown in hot fat. Add boiling water, salt, pepper and celery. Simmer for 1 hour. Combine flour, curry powder and water to make a slurry. Add to beef mixture. Cook 10 minutes. Serve over fluffy rice.
Mexican Rice
3 Slices Bacon
1 1/2 Cups Chopped Onion
1 Cup Chopped Bell Pepper
1 Pound Hamburger
3 Cups Diced Tomato
1/2 Cup Uncooked Rice
1 Teaspoon Chili Powder
1 1/2 Teaspoon Salt
1/4 Teaspoon Pepper
Fry bacon and add onions, bell pepper and hamburger. Cook for 5 minutes. Add remaining ingredients and simmer for 1 hour. Add a little water if needed.
